I just got a new Encore grinder and I am finding the grind size to not match up with what I am reading online. For pour overs and immersion drippers, most are recommending a grind size around #20. However, this is producing grinds that are rock salt in size and not table salt. I would have to be down around a #10 setting to get to table salt.

I brew the vast majority of my home coffee in a 6-cup chemex and an encore. I vary between a 24 for very light roasts to a 27 for dark. That varies based on batch size though, so small very light roast brews are at 24, larger light roast brews are at 25, most all of my brews are at a 26, and large batches of darker roasts I brew at a 27.

I started with a pretty fine grind and the first cup was good but it was slightly more bitter then my default recipe. I increased the grind a tad and brewed another cup. This one came out great.
